1 cup pancake mix (NOT the kind you just add water to)
2/3 cups carrot, finely grated
1/4 cup milk (i prefer buttermilk in this recipe)
1 tablespoon vegetable oil
mix pancake mix and carrot in medium bowl. set aside. beat together egg, milk, and oil. add egg mix to carrot mix. blend until no lumps are left. heat griddle and grease lightly. scoop batter onto griddle in rounds about 2 inches in diameter. cook until light brown on the bottom, turn, then continue cooking until it is solid throughout. this should take about five minutes, depending on how hot your griddle is!
