one of sailorjupiter's favourites - simple but oh-so-tasty meatloaf
2 pounds ground chicken or turkey
chopped onion (or 1 teaspoon onion salt)
1 cup cornbread stove top stuffing (oatmeal or rice works too)
1 teaspoon garlic powder
1/2 teaspoon salt and pepper
1 tablespoon spicy mustard
1 teaspoon maggi seasoning (this is a german product, but it can be found in the imported foods section at the grocery store)
1/2 cup salsa, tomato sauce, or ketchup
pre-heat oven to 350 degrees.
mix all ingredients and form into a large, oval-shaped ball.
place meatloaf in bread pan that has been sprayed with cooking spray. place a little water and a few drops of maggi in the pan. cover with aluminum foil and heat in oven for about 1-1/2 hours or until thoroughly cooked. uncover and brown for the last 15 minutes.
remove the meatloaf and place on large platter; slice like roast to serve.
