1-1/4 cups water
1 stick kanten (also called agar-agar; available in asian markets and specialty food stores)*
1/2 cup sugar
pinch of salt
1 cup milk
1 teaspoon almond extract
1 medium can of fruit cocktail
boil water in a medium saucepan. add kanten, sugar, and salt. stir until kanten and sugar are dissolved. remove from heat. add milk and almond extract. pour mix into oblong baking dish (10 by 6 inches works fine) and refrigerate for and hour or two. when mix is ready, it will be firmer than jell-o, but still smooth and gelatinous.
cut kanten into half-inch cubes. empty cubes into serving bowl. mix in fruit cocktail.
this is very popular on hot summer evenings. grocery stores even sell ready to serve packages of it!
*note: if you can't find kanten, substitute 2 pkgs. unflavoured gelatin for the kanten, and substitute 1/4 cold water plus 1 cup boiling water for the 1 1/4 cup water. make gelatin-mix in medium bowl instead of medium saucepan. sprinkle gelatin over cold water in medium bowl to soften. add boiling water, sugar, and salt. proceed as directed above.
