sushi rice

ingredients:

3 cups uncooked SHORT GRAIN rice
3 cups water
4 tablespoons vinegar
2 tablespoons sugar
3/4 teaspoon salt

preparation:

in a small bowl, mix the vinegar, sugar, and salt!

put the water and rice in a pot, place the lid on, and cook on medium heat until the water boils. then cook on high for one minute. don't remove the pot lid! next, turn the heat to low for ten minutes, taking care not to burn the rice. after this, turn off the stove and let stand off the heat for a few minutes (pot lid still on). the rice should be a little hard.

once the rice is finished, and still pretty hot, add the vinegar mix to it. stir the rice thoroughly with a wooden scoop in a slicing motion, so as to fully spread out the vinegar mix and also to cool off the rice.

now, you can use sushi rice in the making of sushi, but i like it by itself in a bowl! i especially enjoy cooking a very thin one-egg omelette, slicing it into narrow strips, and topping the rice with it. it's very tasty!
