oyako-don

part of a group of dishes known collectively as donburi, oyako-don has an amusing name that plays off the old chicken and eggs joke. the "oya" part of oyako-don means "parent". the "ko" part of oyako-don means "child". thus, this tasty chicken and egg dish incorporates both the "parent" and the "child".

ingredients:

1/4 cup water
1 tablespoon mirin
3 tablespoons soy sauce
1 teaspoon sugar
1 boned, skinned chicken breast, cubed
1 onion, peeled and coarsely chopped
3 eggs, slightly beaten
2 cups cooked rice

preparation:

mix the first four ingredients in a fairly small skiller. bring to a boil over medium-low heat, stirring until sugar is completely dissolved. add chicken and onions. cook until chicken is cooked through and onions are tender. pour eggs over chicken mix in skiller. stir slightly to distribute eggs evenly. cover and let cook for a couple of minutes, just until eggs are done. divide and serve over rice. makes two generous servings.
